Stuffed Baked Chicken – Supper’s Ready!

I cut a slit in a couple chicken breast. I put EVOO and a TBSP of butter in a frying pan. I put seasonings (what I enjoy) on the chicken and then browned them on the outside of both sides. Then I set them aside and put more EVOO and butter in the skillet and sauteed a container of sliced mushroom with some seasoning on them.

Then I took some of the sauteed mushrooms and chopped them up fine and added them to some finely chopped left over sauteed kale from last night’s supper. I added some shredded cheese mozzerella, fiesta blend and some parmesean cheese with some mayonnaise and a squirt of stone mustard and mixed all that up and stuffed it into the chicken breast. I put the remaining sauteed mushrooms on the bottom of a casserole dish, put a little apple juice and water with chicken seasoning in it and placed the stuffed chicken breast on top. I covered with foil and baked for forty-five minutes. I took the foil off and baked for another fifteen minutes. Now to see if it’s tasty. I’ll share a picture. It smells really good. Let’s hope it’s tasty!
